Fingerling Potatoes with Spicy Tomato Gravy
In this recipe, the potatoes become coated in the quick gravy for a zingy side dish or a vegetarian entree.
Serves 4
Ingredients:
3 c fingerling potatoes, washed
1 shallot, finely diced
Olive oil
3 cloves garlic, minced
Pinch crushed red pepper
1 T tomato paste
3 T warm water
Salt and pepper
Big pinch dried oregano
Procedure:
Bring a large pot of water to the boil. Add some salt and the potatoes. Simmer until just fork tender. Drain and set potatoes aside. In a sauté pan, pour enough olive oil to film the bottom. Add shallot and garlic, sauté gently for 3 minutes. Add crushed pepper and oregano. Stir the tomato paste into the warm water until combined then add to pan. Cook on low heat for 3 minutes, add potatoes and stir to coat. Remove from heat, add salt and pepper to taste. Toss to combine then serve. ~KSM
